Alsi Ke Ladoo

Everyone knows the many benefits of flaxseed, but is often unsure how to incorporate them into everyday recipes. Try this ladoo recipe this festive season and you will make the sweet every month.

Ingredients

  • 500 grams of alsi or linseed
  • 500 grams of wheat flour
  • 400 grams of desi ghee
  • 750 grams of sugar or jaggery
  • 100 grams of cashew nuts
  • 100 grams of almonds
  • 50 grams of pistachios
  • 20 grams of raisins
  • 15 cardamom pods

Proceedings

  • Roast the linseeds in a dry pan. You will hear a cracking noise while frying. When ready, lightly grind them in a blender – being careful not to over grind.
  • In a separate pan, roast the wheat flour in desi ghee until it turns golden brown and fragrant. Turn off the flame and set aside.
  • In the same pan with the remaining ghee, toast the ground flaxseeds over medium or low heat until they turn brown and give off a nutty aroma.
  • Roughly chop cashew nuts, almonds and pistachios.
  • In a pan, mix jaggery or sugar (250 gm) with 1¼ cups water. Stir until the jaggery or sugar dissolves. Test the syrup by putting a small amount between your fingers – if a single thread forms, it's ready.
  • Add the toasted wheat flour, flax seeds and chopped nuts to the syrup. Mix well.
  • Allow the mixture to cool slightly, then take small portions (about the size of a lemon) and roll them into round ladoos.
